With its specially designed domed lid and sloped sides, this pan was created for dishes that start with browning or searing meat, then adding vegetables and other ingredients before covering to cook on the stove or in the oven. The 13"-diameter pan is excellent for pot roast, beef Burgundy, or stuffed cabbage. The 10"-diameter pan is excellent for a small pot roast or up to four servings of beef Burgundy or stuffed cabbage.
All-Clad Cop-R-Chef cookware combines the warm glow of copper with the durability of a stainless steel interior, so you never have to worry about retinning. The extra-thick copper exterior, a core of pure aluminum (across the bottom and all the way up the sides) and the cooking surface of 18/10 stainless steel are permanently bonded, so you get the beauty and responsiveness of copper, the superior heat conductivity of aluminum, and the nonreactive, stick-resistant benefits of stainless steel. I'd been looking for a copper paella pan with a lid for the last year or two. This All-Clad is a beautiful and functional piece that will last a lifetime. It is heavy, well constructed, and spectacular to work with. The pan with lid provides multiple uses so that it is an endless workhorse in your kitchen. I love it.
