Despite the many claims that silicone molds dont work well for canneles I get decent crispy results with them.
The trick is not to use solid cookie sheet under them because it prevents the molds from getting as much direct heat as possible.
Its better to just use a rack under them, reason is that silicone is poor conductor of heat so they need to be exposed to direct heat and not shielded by a solid cookie sheet.
