Premium is the correct word... November 6, 2008 for this cocotte. Although the word is misused by advertisers...this is really premium cookware. I have used this several times for various meals. It is the real deal. Made in France, it is hard to see how anything could perform better. Others may like a different brand for their own reasons, but this cocotte is near perfection for a cook's use-especially the variety and consistency of heat one can get to the foods used. I really like using it and clean up is easy, too-it's nearly non-stick from my experience. I hope everyone is as satisfied w/ their dutch oven cookware as I am with this.
It's also very attractive and the color is much more subtle than is pictured here w/ the blending of darker, almost chianti or burgundy-like hues and brighter cherry reds. Amazon has some great pricing, too. I am planning on buying one for a member of my family for Christmas. I highly recommend Staub if you need or want a "dutch oven" to cook with.

For any person who know about cooking a cocotte is a must have and the price that Amazon has on this premium French oven is beyond belief. A cocotte works just like a dutch oven and any receipt that requires slow cooking can be done in this cocotte. For those who do not know of Staub, it is a manufacture of cookware in France that has had a relationship to the cookware business longer than Le Creuset, but has kept truer to the ideal of keeping production in France as opposed to Le Creuset which now manufactures anything anywhere and just puts its name on it... In regards to the pot, I own the red, yellow and blue. The red color is a deep rich gloss that darkens as you approach the top of the pot. The yellow and blue are equally impressive. The yellow is and blue are more uniform all around. I also have a saute pan in black, which I love as well. The pictures do not do justice to these wonderful pieces of cookware. The insides is are a sturdy black matte that is neither glossy or dual, but seems to have a definite non-stick quality. The enamel coating also provides a glass like surface to the cast iron pot that prevents rust and helps in creating a non-stick surface that one truly does not get from straight cast iron. I have already cooked a several roasts and a vegetable stew inside my pot and it really does retain and distribute moisture, when the lid is kept on. The three cocottes I have as well as the saute pan are all extremely well made a testament to the quality is the higher temperature these pots can take 500 as opposed to 400 to 450 from others. And since these are sand model made you will see "irregularities", but these are not they in fact these small dimples are proof that your pot was made they way cast iron should be via a single cast. In addition the cast iron qualities of these pot, the stunning color allows for the use of the Cocotte on the table as well as the oven. I will say that if you do take a chance on Staub you will be converted and become part of those cooks who know rather than the "I have a..." crowd of sheep. I am not sure how another reviewer could have so much of a problem with these cocottes, but I feel it most like has to do with poor handling and mistreatment. I love my Staub cookware and feel I own enough of their products to recommend them. I strongly encourage you to look into Staub as an alternative to Le Creuset.
